I made a delectable fruit salad for Christmas breakfast and oh my! Not only was it delicious, it was a nice side dish after the sheet tray of buttery croissants.
This easy fruit salad is made with blackberries, raspberries, kiwi, strawberries, grapes and mandarin slices. The key is to use fruits in season. Mangos, peaches or pineapple would have been a good addition but they weren’t any at my grocery store.
The Yummy Fruit Salad
- Start by cleaning all your fruit. Pat dry with a paper towel.
- Now the tedious part of the recipe: cutting up the fruits. This is the one task that takes the longest. Once complete, everything else comes together in a cinch.
- Start by cutting up the strawberries, grapes, kiwi and mandarin. Half the grapes. Remove the strawberry stem and halve. To cut the kiwi, peel the skin or scoop it out with a spoon. Then chop horizontally and halve. For the mandarin, simply peel it as you would usually. Careful not to expose the fruit beneath the internal peel.
- In a large bowl, throw in all the fruits.
- For the fruit salad dressing, grab a lime and honey. Zest the lime in a small bowl. And squeeze the whole juice of the lime. Drop in about 1/3 cup of honey and whisk to mix. You can also do this to taste.
Add orange liqueur for additional flavor.
- Pour the dressing over the fruits. Lightly toss the fruits in the honey lime mixture. Careful not to over toss, we want those fruits to stay intact.
Garnish with mint. Place in the fridge for at least six hours. The fruits will soak up the yummy fruit salad dressing to create a lovely simple syrup. Enjoy!
